Obviously I’m a bit of an overachiever this year. I just counted cocktails posted this holiday season. I reached a dozen, my standard, on Christmas Eve. But, I have two more to share. I blame this on the fact that we were home for both Thanksgiving and Christmas this year. I had lots of time to concoct cocktails.
As I write this I’m sitting in a cute little house on the shores of Penn Cove on Whidbey Island. Our perfect New Years weekend? A quiet one away. It rained most of today, but tomorrow there is only a 20% chance of rain, so we have a hike planned. Followed by hot toddy. As soon as I finish sharing this cocktail, which I actually mixed, photographed and enjoyed on Christmas Eve, I’m going to go pop a bottle of sparkly and mix me another. Quite tasty. Definitely festive. Would probably go over very well at a New Years Eve celebration.
Pomegranate Prosecco Cocktail
4 oz prosecco
2 oz pomegranate juice
1/2 oz Cointreau (or knock-off equivalent)
Stir together. Serves one in a wine glass, probably two if you’re using champagne glasses, which are festive but require refills way too often.
